Hot Chick


My husband the Bear is crazy about Curry -- any type of curry.   He calls curry a "Ruby Murray" -- Cockney Rhyming slang language :) Curry rhymes with Murray :).....


We love  chicken, but will only buy wholesome, organic, free range chickens which I source from www.vissers-haven.com.  They deliver to our area every month, and also offer a whole host of other farm goodies and home baked products which are worth a try.  I really believe in helping sustain small businesses as this is the only way we will grow our country's economy, and we should particularly be encouraging farmers to stay farming and growing our food.  Our farmers can do with all the support we have to offer right now as the drought has really caused a huge amount of suffering and angst.



Tonight is a special mid week curry night at home for the two of us.  We try to eat clean during the week, so no carbs until the Weekend :(  Plenty of green veggies and coriander will make the curry totally yummy.  A chef friend once shared a really key secret to great curry sauce, and that is to cut your onions into rounds, they should be about as thick as you would cut them for onion rings.  You then deep fry the onions in your oil of preference.  It makes the curry sauce deliciously sweet and wonderful, so worth doing.  Thanks Stef for this bit of advice.  Stef is the owner/chef at Stefs Table in Hartbeespoortdam.  Tony Bear and I had many a date night there in the past and he cooks a mean Asian Style Pork dish. We both love really hot curry, so this chicken curry contains lots of smoked dry chilies, adding a gorgeous smoky flavour-- I also use only really good Italian tomatoes in my curry and I buy my Indian spices at the market.  Its so important to mix your own spices and Marsala rather than just copping out and buying curry powder at the super market.

It is looking good, I will add the veggies when I get back from my Spinning Class.
